Assembly

- 1/3 cup shaved Parmigiano Reggiano or shredded mozzarella
- Freshly ground black pepper
Instructions
Prepare the Zucchini
- Preheat oven to 400°F.

- Trim the ends off each zucchini. Slice each lengthwise into 6 strips, keeping the four inner slices from each zucchini. (Reserve the outermost slices for another use.)
- Arrange zucchini slices on a sheet pan. Drizzle lightly with olive oil and sprinkle with salt.
