- 25 g filtered water non-chlorinated, room temperature (plus more for feeding)
- 25 g organic flour whole-grain rye or heritage whole wheat preferred (plus more for feeding)
Instructions
Make a Zero Waste Starter
- Day 1In a clean jar, stir together 25 g water and 25 g flour until smooth. Cover loosely (lid resting on top or cloth secured with a band). Leave at room temperature (about 72°F).

- Day 2Stir in 25 g water + 25 g flour. Cover loosely and leave at room temperature.
- Day 3Repeat feeding: 25 g water + 25 g flour. Cover loosely and rest at room temperature.
