- 1 cup homemade bone broth fish stock, or water
- Zest and juice of 2 limes
- 1 tbsp fish sauce optional
- 1 lb wild fish cut into 1-inch pieces
- 3 cups purple cabbage very thinly sliced, divided
- Mineral salt to taste
- Freshly ground white pepper to taste
Optional Garnishes
- Fresh cilantro or thai basil
- Lime wedges
- Sliced red chili
Instructions
- Heat the olive oil in a large pot over medium heat. Add the white parts of the scallions and cook until softened, about 2 minutes.
- Add the garlic and ginger and sauté for 2 minutes, stirring frequently. Stir in the curry paste and cook for another 2 minutes until fragrant.
- Add the kabocha squash and cook for 5 minutes, stirring occasionally, until just beginning to soften.
- Pour in the coconut milk, bone broth, lime juice, lime zest, and fish sauce if using. Stir to combine and bring to a gentle simmer.
- Gently add the fish pieces to the pot, followed by half of the green scallions and 2 cups of the purple cabbage. Cover and simmer for about 10 minutes, or until the fish is just cooked through and flakes easily. Avoid overcooking.
