- 1 1/2 cups wild rice
- 3 1/2 cups chicken bone broth low salt or homemade
- 1 large onion chopped
- 8 oz mushrooms roughly chopped
- 1 tbsp dried tarragon
- 1/2 tbsp dried sage
- 1/2 tsp mineral salt
- 1/2 tsp freshly ground black pepper
- 1/8 tsp cayenne pepper or more to taste
- 8 garlic cloves peeled
- 6 small sprigs fresh rosemary or 1 tbsp dried rosemary
- 4 tbsp grass-fed butter
Instructions
- Season the chicken.In a bowl, toss the chicken with the olive oil and paprika. Season lightly with salt and pepper.

- Prepare the wild rice.Add the wild rice, bone broth, onion, mushrooms, tarragon, sage, salt, pepper, and cayenne to the slow cooker. Stir to combine.
- Add the chicken and aromatics.Nestle the seasoned chicken into the wild rice mixture. Tuck the garlic cloves and rosemary sprigs around the chicken.
- Slow cook.Cover and cook on LOW for about 3 hours, or until the chicken reaches an internal temperature of 165°F and the wild rice is tender.
- Finish one of two ways.Simple: Stir the butter directly into the wild rice just before serving.Elevated: Preheat the broiler to HIGH. Transfer the chicken and garlic cloves to a sheet pan and dot with the butter. Broil for about 2 minutes, or until the chicken is lightly browned. Mash the softened garlic with a fork and spoon the melted garlic butter over the chicken.
- Serve.Remove and discard the rosemary stems. Fluff the wild rice, divide among plates, and top with the chicken. If using the elevated finish, drizzle with any remaining garlic butter.
