  • Add the red lentils and 2 cups of water to a bowl and soak for 3 to 8 hours. Drain and rinse well.
  • Preheat oven to 400°F. Line a sheet tray with parchment paper.
  • Add soaked lentils, 1/2 cup water, lime juice, and salt to a blender. Blend until completely smooth.
  • Pour the batter onto the prepared sheet tray, tipping and tapping gently to spread evenly into a thin layer.
  • Bake for 20 minutes, until the surface is dry and only lightly golden. (Some puffing during baking is normal.)
  • Remove from oven and cool for 10 minutes.
