- 1 tsp coconut sugar or raw honey
- 2 cloves garlic finely grated
- 1 tsp fresh ginger finely grated
- 1 tbsp Korean chili flakes (gochugaru)
- 2 tsp fish sauce (optional but traditional)
- 2 green onions thinly sliced
- 1 small carrot julienned
- 2 tbsp filtered water
Instructions
- Prepare the cabbageSlice the napa cabbage lengthwise, then cut into 1-inch pieces. Place in a large bowl and sprinkle with the mineral salt. Toss gently to coat and let sit for 20 minutes until the cabbage softens and releases some liquid.

- Rinse and drainRinse the cabbage briefly under cool water to remove excess salt. Drain well and gently squeeze out any remaining moisture.
