Perfectly Roasted Salmon
Equipment
- Oven-safe fry pan or cast iron skillet
Ingredients
- 2 wild-caught salmon fillets 6 to 8 ounces each
- 3/4 tsp mineral salt
- 2 tbsp Dijon mustard
- 2 tbsp hemp hearts or sesame seeds (optional)
- 1/2 tsp freshly ground black pepper
Instructions
- Preheat oven to 425°F. Pat salmon fillets dry with a paper towel. Season evenly with mineral salt.

- Place salmon skin-side down in an oven-safe fry pan.
- Spread Dijon mustard evenly over the top of each fillet.
- If using, sprinkle hemp hearts or sesame seeds over the mustard and gently press to adhere.
- Season with black pepper.
- Roast in the upper half of the oven for at least 12 to 16 minutes, depending on thickness. NOTE: Recommended cooking time is 12 to 16 minutes per inch of thickness.
- Switch oven to broil and cook 1 to 2 minutes more, watching closely, until lightly golden on top.
- Remove from oven and rest briefly before serving.

- Salmon is done when it flakes easily and reaches an internal temperature of 125°F to 130°F for medium.
