- 1/2 medium red onion thinly sliced into half moons or 1/2 cup pickled red onion
- 2 garlic cloves thinly sliced
- 1 tbsp red wine vinegar
- 1 tbsp fresh oregano, finely chopped or 1 tsp dried oregano
- Lemon rounds for serving

Instructions
- Preheat oven to 425°F.
