Instructions

Prepare the Chicken Crust

  • Preheat oven to 400°F. Line a baking sheet or pizza pan with parchment paper.

  • Drain the chicken thoroughly. Transfer to a clean kitchen towel or paper towels and press firmly to remove as much moisture as possible.
  • Place the chicken in a food processor and pulse until it resembles coarse crumbs. Alternatively, shred thoroughly with a fork.
  • Transfer to a mixing bowl and add the egg, Parmigiano Reggiano, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  • Spread the mixture onto the prepared baking sheet and press into a 10- to 12-inch circle approximately 1/4-inch thick.
  • Bake for 20 to 25 minutes, or until golden brown and firm to the touch.

Make the Quick Tomato Sauce

  • While the crust bakes, whisk together the tomato paste and water in a small saucepan.
  • Add the balsamic vinegar, garlic, oregano, basil, and salt.
  • Simmer over low heat for 8 to 10 minutes, stirring occasionally.

Assemble the Pizza

  • Remove the crust from the oven.
  • For an extra crispy crust, carefully flip the crust and bake for an additional 5 to 10 minutes.
  • Spread the sauce evenly over the crust and add desired toppings.
