- 1 small white onion peeled and diced
- 4 garlic cloves minced
- 8 cups chicken bone broth or vegetable broth or miso broth
- 1 small head broccoli roughly chopped (florets and tender stems)
- 1 small head cauliflower roughly chopped
- 15 oz white beans cannellini or great northern, drained and rinsed (about 1 1/2 cups)
- 1 inch piece fresh ginger peeled and minced (optional)
- 2 tsp ground cumin
- 1 tsp mineral salt to taste
- 1/4 tsp freshly ground white or black pepper
- Pinch red pepper flakes adjust for heat
- 6 cups fresh baby spinach or 1 cup frozen green peas
- 1 fresh lemon zest and juice
Suggested Toppings
- Sliced avocado
- Fresh cilantro leaves
- Toasted seeds or nuts pepitas, sunflower seeds, pine nuts
Instructions
