Instructions

  • Heat a large fry pan over medium-low heat. Add 2 tbsp olive oil and the onion. Sauté until soft and fragrant, about 12 minutes. Set aside in the pan.

  • Prepare an ice bath in a medium bowl.
  • Bring a large pot of well-salted water to a boil. Add spinach, kale, and basil and cook for 1 minute. Transfer immediately to the ice bath, then drain well.
  • Begin cooking pasta in the same pot of boiling water. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  • Add blanched greens, cooked onions, remaining 2 tbsp olive oil, pistachios, Parmigiano, and cannellini beans (if using) to a food processor. Blend until smooth.
  • With the processor running, slowly add ~1/3 cup hot pasta water until silky. Let sauce rest.
  • In the same fry pan, cook ground beef and garlic over medium heat, breaking into small pieces until browned. Reduce heat to low.
  • Add cooked pasta and green sauce to the pan. Stir gently, adding reserved pasta water as needed until coated.
