Ingredients
- 1 cup mashed sweet potato about 1 medium sweet potato
- 1 cup whole-milk ricotta or substitute additional mashed sweet potato
- 1 pasture-raised egg
- 1 tsp mineral salt
- 2 to 3 cups einkorn flour
- 1 lb cremini mushrooms finely chopped
- 6 tbsp grass-fed butter divided
- 1/2 tsp freshly ground black pepper
- 1/4 tsp mineral salt
- 2 garlic cloves minced
- 2 tsp fresh thyme chopped
- 2 tsp fresh rosemary chopped
- 1 tsp chili flakes
- 1/4 cup aged balsamic vinegar
- 2 tbsp high-phenolic olive oil
- 4 oz goat cheese crumbled
- Fresh purple basil minced (for garnish)
Instructions
- Cook and Mash the Sweet PotatoPierce the sweet potato all over with a fork.Microwave: Wrap in damp paper towels and cook on high for 7 to 10 minutes, until fork-tender.Oven: Bake at 400°F for about 50 minutes, until very soft.Cool slightly, halve, scoop out flesh, and mash until smooth. Discard skins.

- Make the DoughIn a large bowl, mix mashed sweet potato, ricotta (if using), egg, and salt until smooth. Add 2 cups einkorn flour and gently mix by hand just until a soft dough forms. Add more flour as needed; dough should be slightly moist but not sticky.
- Shape the GnocchiTransfer to a lightly floured surface. Divide dough into 4 portions. Roll each into a rope about 1/2-inch thick, then cut into 1/2-inch pieces.Optional: Dust lightly with flour and then roll each piece of dough down the back of a fork for texture.
- Boil the GnocchiBring a large pot of well-salted water to a boil. Gently add gnocchi and cook until they float, about 2 to 3 minutes. Remove with a slotted spoon and transfer to a paper towel–lined plate.
- Make the Mushroom & Brown Butter SauceHeat a large fry pan over medium-high heat and melt 2 tablespoons butter. Add mushrooms in a single layer and cook undisturbed for about 2 minutes to caramelize. Toss once, season with salt, pepper, and chili flakes, and cook about 5 minutes more.Add 2 more tablespoons butter and cook until lightly browned. Reduce heat, add garlic, thyme, and rosemary, and cook about 10 seconds until fragrant. Pour in balsamic vinegar and simmer until mushrooms are glossy and coated. Remove from heat.
- Crisp the GnocchiHeat a large fry pan over medium heat. Add remaining 2 tablespoons butter and the olive oil. Add gnocchi and cook, stirring every few minutes, until deeply golden and crisp, about 10 to 15 minutes. Add mushroom sauce and gently toss to combine.
- ServePlate and finish with crumbled goat cheese and minced purple basil.
