- Large skillet or Dutch oven
- Blender or immersion blender
Ingredients
Pasta
- 10 oz bucatini spaghetti, fettuccine, or other long pasta
- 1 tbsp mineral salt for pasta water
Zucchini Sauce
- 2 tbsp high-phenolic olive oil
- 4 garlic cloves minced
- 1 1/2 lb zucchini roughly chopped
- 1/2 tsp mineral salt
- 1/2 tsp freshly ground black pepper
- 1/8 tsp red pepper flakes
- 1 1/2 cups chicken bone broth
- 2 tbsp tomato paste
- 3/4 cup freshly grated Parmigiano Reggiano
- 1 cup sweet corn kernels fresh or canned, drained
Optional Garnishes
- Additional Parmigiano Reggiano
- Fresh basil torn
- Crispy pasture-raised bacon
- Pangrattato (crispy toasted breadcrumbs)
Instructions
Cook the Pasta
- Bring a large pot of water to a boil and season generously with the mineral salt.

- Cook the pasta according to package directions, stopping 2 minutes before al dente.
- Reserve 1 cup of pasta cooking water, then drain the pasta.
Build the Sauce
- Heat the olive oil in a large skillet or Dutch oven over medium heat.
- Add the garlic and cook for 30 seconds until fragrant.
- Add the zucchini, salt, black pepper, and red pepper flakes.
- Cook for 6 to 8 minutes, stirring occasionally, until the zucchini has softened and reduced significantly in volume.
Blend Until Silky
- Transfer the cooked zucchini mixture to a blender. Alternatively, leave the zucchini in the pot and use an immersion blender to puree the mixture directly in the pot.
- Add the bone broth, tomato paste, and Parmigiano Reggiano.
- Blend until completely smooth and velvety.
Finish the Pasta
- Return the zucchini sauce to the skillet.
- Stir in the corn and bring the sauce to a gentle simmer for 2 to 3 minutes.
- Add the drained pasta and toss continuously for 1 to 2 minutes until the sauce coats every strand.
- If needed, add a splash of reserved pasta water to loosen the sauce.
Serve
- Divide among bowls.
- Top with additional Parmigiano Reggiano.
- Garnish with torn basil, crispy bacon, or pangrattato if desired.
- Serve immediately.
