Coconut Probiotic Yogurt
Equipment
- Blender or immersion blender or whisk
- Clean tasting spoons
Ingredients
- 13.5 oz organic full-fat coconut milk without additives or gums
- 2 tbsp coconut sugar
- Contents of 2 probiotic capsules 1/2 tsp probiotic powder or 1 tbsp pre-made coconut yogurt
Optional Flavors
- 2 tbsp raw cacao powder
- 1 oz freeze-dried fruit raspberry, lime, etc.
- 1 tbsp fresh lemon juice or lime or orange juice
- 1/2 tsp vanilla powder
Instructions
- Blend the coconut milk and coconut sugar on high until completely smooth and fully emulsified. If whisking by hand, whisk vigorously until well combined.

- Add the probiotic culture and blend on low, or whisk gently, just until incorporated. Avoid over-mixing to protect the live cultures.
- Transfer the mixture to a very clean or sterilized quart-size glass jar. Cover loosely with a lid, or use a clean cloth secured with a rubber band to allow airflow.
- Place in a dehydrator, low oven, or warm environment maintained between 97°F and 100°F. Ferment for 14 to 36 hours, depending on desired tanginess.
- Taste periodically using a clean spoon to monitor flavor development. Longer fermentation will produce a more pronounced tangy flavor.
- After fermentation, separation is normal. For a thick, fluffy texture, blend mostly the creamy top layer with some or all of the separated liquid, depending on your preferred consistency. Add any optional flavorings at this stage and blend until smooth.
- Transfer back to the jar, seal with a lid, and refrigerate for at least 6 hours to chill and thicken.

I have tried this method using a starter from coconut yogurt I bought at the store and created a separate batch using MyReuteri.
The yogurt is yellow/tan in nature (not white and creamy), and its runny even though most of the liquid separated on the bottom. I am using a fermenter and the temperature is accurate 99 degrees. I have tried other methods, like boiling the coconut milk, but those produced the same results, and some caused a yeast like smell. All batches were discarded.

Some separation is completely normal, but a strong yeasty smell definitely isn’t. Since you’ve had the same result with two different starters using two different methods, my first question is: what brand of full-fat coconut milk are you using? Also, does it contain any gums or stabilizers, and how long are you fermenting it?
