A Timeless, Family Inspired Favorite
Classic Banana Bread is timeless for a reason, and this version is no exception as it is irresistibly good in the way only a truly loved recipe can be. Inspired by my Aunt Gail’s beloved family staple, this banana bread carries the kind of quiet magic that comes from generations of baking, sharing, and reaching for just one more slice.
I’ve gently updated the original with wholesome, thoughtfully chosen ingredients and flexible flour options, creating a loaf that feels both nostalgic and nourishing. Naturally sweet, tender, and fragrant, it’s the kind of banana bread that fills the kitchen with warmth and disappears almost as quickly as it cools.
This recipe makes a generous batch (two standard loaves, or one extra-large loaf plus a dozen muffins) making it perfect for sharing, gifting, or tucking away in the freezer for later. Fresh from the oven, it’s soft and comforting; toasted the next day with a swipe of butter, it’s pure, familiar joy.
Banana bread has a way of feeling like home, and this version honors that tradition while fitting beautifully into a modern, whole-food kitchen.

Why You’ll Love This Banana Bread
One of the reasons banana bread has endured for so long is its forgiving nature. Overripe bananas that might otherwise go to waste become the foundation for something deeply satisfying, rich in flavor, and naturally sweet. The riper the bananas, the better. Those dark, spotty peels signal concentrated sugars and a softer texture that blends seamlessly into the batter.
This recipe is also wonderfully adaptable. You can bake it as classic loaves, portion it into muffins for easy breakfasts or snacks, or even use it as a base for creative additions. Chopped walnuts or pecans add crunch, dark chocolate brings a touch of indulgence, and a sprinkle of cinnamon sugar on top creates a lightly crisp crust that contrasts beautifully with the tender interior.
Because this banana bread freezes so well, it’s an ideal recipe to bake ahead. Wrap cooled slices or loaves tightly and freeze for up to three months. A quick warm-up in the toaster or oven brings it right back to life, making it feel freshly baked whenever the craving hits.
Whether you enjoy it with your morning coffee, pack it into a lunchbox, or serve it warm as an afternoon treat, this Classic Banana Bread is the kind of recipe you’ll return to again and again: simple, reliable, and deeply comforting in every bite.
How To Make Banana Bread
This recipe comes together easily using a stand mixer, but can also be made by hand.
You’ll start by creaming butter and coconut sugar until light and fluffy; this step creates structure and lift. Greek yogurt adds moisture and tenderness, while a blend of flours gives the bread its hearty yet soft texture. The batter is thick, rich, and forgiving, making it ideal for both loaves and muffins.
Storage & Reheating
- Room Temperature: Store covered for up to 2 days
- Refrigerator: Keeps well for 5 to 6 days
- Freezer: Freeze slices or whole loaves for up to 3 months
- Reheat: Toast slices or warm gently in a 300°F oven.
FAQ | Classic Banana Bread
Can I USE OTHER TYPES OF FLOUR?
Yes. Instead of the flour blend listed in the recipe, use 4 cups total of your favorite high-quality, all-purpose flour (or gluten-free). Whole buckwheat flour or whole wheat flour make great substitutions for the almond flour.
Can I reduce the sweetness?
Yes. Reduce coconut sugar slightly or omit the maple syrup if desired.
Can I add mix-ins?
Absolutely. Chocolate chips, walnuts, pecans, or shredded coconut all work well.
Why does this bake at a lower temperature?
The long, slow bake ensures even cooking for large loaves without drying out the center.

- Fork or potato masher
- 2 Loaf pan or 1 loaf pan + muffin tin
Ingredients
- 44 oz organic bananas mashed (about 5 1/2 cups or 10 small–medium bananas)

- 2 tsp vanilla powder or vanilla extract
- 2 cups organic all-purpose flour unbleached
- 1 cup organic almond flour
- 1/2 cup cassava flour
- 1/2 cup coconut flour
- 2 tsp Ceylon cinnamon
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp mineral salt
Instructions
- Preheat the oven to 325°F. Lightly grease two loaf pans, or one loaf pan and one muffin tin.

- Mash the bananas with a fork until mostly smooth. Set aside.
- Mix the dry ingredients in a bowl: flours, cinnamon, baking soda, baking powder, and salt.
- Cream the butter and sugar in a stand mixer on medium speed until light and fluffy, about 5 minutes. Add Greek yogurt and mix until incorporated.
- Add the wet ingredients: mashed bananas, maple syrup, eggs, and vanilla. Mix until well combined.
- Incorporate the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.
- Divide the batter evenly between pans. If making muffins, fill muffin cups nearly to the top and pour remaining batter into the loaf pan.
- Bake loaves for 80 to 85 minutes, or until a toothpick inserted into the center comes out clean. Bake muffins for 35 to 40 minutes.
- Cool for at least 15 minutes before removing from pans. Transfer to a wire rack and cool completely, about 1 hour.
